Today, the Greek table can boast of a vast range of main dishes, appetizers and sweets. Of course, the country now also has abundant restaurants where food from all over the world can be sampled. But when we talk of 'Greek cooking' what we mean is the way in which the products of the earth of that country can be combined at the particular time of year. Needless to say, the deep freeze and the other ways of preserving food have put an end to the entirely 'seasonal' nature of Greek food, but it is no coincidence that we continue to think about refreshing dishes in the summer and hot soups in the winter.For this book we have brought together 168 of the most characteristic Greek recipes. The main body of the collection is supplemented with 12 traditional festive recipes, 25 local specialities, 17 of the most typical Greek sweets and some pages with useful background information. We have also included 150 colour photographs which, we hope, will help cooks make up their minds on the aesthetic question of presentation. The recipes we have chosen are the most representative, but of course there are countless variations on them. Cooking is an art, and this book provides an opportunity for every cook to use his or her creative imagination, adapting the recipes to personal taste. [...] (From the publisher)
